How To Butterfly Lamb
There are several ways to barbecue leg of lamb. The easiest way is to keep it whole, and hot smoke it as a round roast. Another way is to cut it open, unfold it like a butterfly, and lay the resulting butterfly lamb like a flat roast on the barbecue grill.
By butterflying a leg of lamb you get a thinner piece of meat which will shorten the required cooking time by a factor 2 or more. You will also increase the effectiveness of a marinade or dry rub since there will be more meat surface to absorb the flavours.

How to Butterfly Leg of Lamb
There may be more ways to obtain a flat leg of lamb, but we can recommend the following procedure for a bone-in leg of lamb:
Step 1 - Wash Your Leg of Lamb

Blot lamb roast dry using paper towels; |

Place leg of lamb on cutting board with the flat side down, short side of the leg (inner thigh) pointing upwards; |

Repeat the same procedure for the other side of the leg of lamb:
