How To Make Guacamole
You may wish to call this an avocado salad recipe, but really, this Mexican sidedish can only be called "guacamole". To make guacamole is very easy. And freshly made Mexican guacamole is not only very tasty, it is also very nutricious, full of vitamins, and it contains lots of fiber.
This is the kind of stuff that you should eat every day!
I'm lucky. My wife Juanita loves fresh guacamole a lot, and she makes it quite often!
Ingredients
Juanita uses the following ingredients in her guacamole recipe:

| avocados, ripe |
| tomatoes, finely chopped |
| onion, very finely chopped |
| garlic, very finely chopped |
| red Fresno peppers or other red chile peppers, deseeded and very finely chopped |
| lime *), the juice |
| cilantro (fresh coriander), finely chopped |
| sea salt, to taste |
*) For clarity, by "lime" we mean that round green type of lemon. (if you can't get limes, use lemons instead. The taste is not the same, but it's better than nothing!)
Please note that the amount of chile peppers is to suit your own taste, and the tastebuds of your guests...
Preparation
Juanita prepares her guacamole as follows:

Peel the tomatoes, then cut in half, discard fluid, seeds and white innards, and chop to small pieces; |

Cut avocados in half, remove the seed, scoop soft flesh out of the peel, and use fork to squeeze to a soft mass; |
- |
Squeeze the half lime, mix juice into the avocado mass; (this is an important step, since the lime juice will help keep the fresh green colour of the avocado intact) |

Chop onion and garlic very fine, and mix into avocado mass; |
- |
Finely chop cilantro; Keep some nice leaves for garnish; |
- |
Add chopped tomato and cilantro to the avocado mass, add sea salt to taste, and mix thoroughly; |
- |
Cover guacamole and put in the fridge for at least one hour to allow all flavours to mix well; |
Above activities can be done before serving.
Right before serving:

Transfer the guacamole to a serving bowl or dish and garnish with some cilantro leaves. |
