Adobo Maracucho
Venezuelan Ginger Marinade
An adobo is a spicy Latin American marinade, mostly on the basis of freshly squeezed lime, lemon or orange juice. We use this particular adobo recipe for marinating pork and to make Chicken Maracucho.
In this adobo recipe, lime juice, brandy, ginger and garlic form the most important ingredients.
Ingredients
For this Venezuelan adobo recipe you'll need the following ingredients:

| 4-6 cloves |
| 1 teaspoon |
| 1 teaspoon |
| 1-2 teaspoons |
| 1 teaspoon |
| Limes *) |
| Brandy |
| fresh Ginger |
| Garlic (to taste) |
| ground Cummin |
| Sugar |
| Black Pepper, coarsely ground |
| Salt (no iodine) |
*) For clarity, by "limes" we mean those round green lemons. (if you can't get limes, use lemons instead. The taste is not the same, but it's better than nothing!)
The above quantities will yield about 1 cup of Adobo Maracucho.
Preparation of the Adobo

Squeeze the limes; |

Add the brandy to the lime juice and stir (not shaken...); |

Peel the fresh ginger, slice thinly, add to lime brandy mix; |

Peel the garlic, slice thinly, add to lime brandy mix; |

Grind cummin, add to lime brandy mix; |

Add sugar, salt and black pepper to taste; |
Marinate the meat in the adobo for at least two hours, but preferably overnight.
